Light Shrimp Dinner

I made one of my favorite easy week night dinners last night:
Roasted Shrimp with Rosemary and Thyme
You can use any fresh herbs, you start with 5 tablespoons of olive oil, the herbs and some salt and pepper ( I use Jane's Krazy Mixed-Up Seasonings: Original Mixed-Up Salt) and roast that in a 400 degree oven for 10 minutes or so
















Let that cool a bit and then add the shrimp (I also add shallots in!) Toss to coat with the herbs and oil
Pop it back in the oven and cook the shrimp for another 10 minutes, then let cool slightly and add a tablespoon of white wine vinegar, toss and serve over white rice with a green salad.
